Some time ago,I met a young Israeli man who was travelling around New Zealand.While he was in the Nelson area,he was operating a small push-cart making and selling Moroccon Donuts.I was impressed by the simplicity of the operation,plus the taste and appeal of the Moroccan Donuts.He eventually moved on,but not before giving me most of the recipe and some of the hints needed to make these treats.
After a lot of experimentation,much trial and error,and a lot of work, I was satisfied that I had a winner on my hands.I felt I had perfected my own recipe and was ready to try marketing it at local Markets and Events.I converted a Nissan S-Cargo Van as a 'DonutsMobile.' It was very compact,but I made a fold out system, where the equipment was attached to the rear tailgate and folded out.I made the gas-powered cooker,the sinks,prep tables and surfaces,plus signs and fabric surrounds.I was a regular at local Market,where I remember people saying the aroma of the cooking donuts floating around in the air ' drew them in'. Soon after , I did a major event at Canaan Downs,Takaka Hill .I was there over three days,and turned over approximately $4000.00. There was a shortage of Food Carts,so the Moroccan Donuts were a hit.I well remember the comment that " it is very rare to find a Vegan snack" at Events.
I carried on travelling around to various events in the Top of the South.I eventually added a gas-powered Coffee machine, which added to the versatility of the rig.As you can imagine,the two lines went together well.
